Youvetsi means a plate with orzo and tomato sauce. The classic, favorite “youvetsi” is made with chicken leg fillet and orzo wholewheat. You may use homemade chicken broth for cooking.

- For the chicken
- 750 gr. chicken leg fillet
- 1 tbsp. coriander powder
- 2 tbsp. oregano
- 1 tbsp. sweet paprika
- Salt, pepper
- Juice of 1/2 lemon
- For the orzo pasta
- 6 tbsp olive oil
- 1 green pepper, sliced
- 2 chopped onions
- 1 finely chopped red pepper
- 3 cloves chopped garlic
- 2 cups grated tomato
- 5 cups chicken broth
- 2 cups (360 g) orzo pasta, (preferably wholweat)
- 2 tbsp. oregano
- 1 tbsp. sweet paprika
- salt- pepper
Εκτέλεση
- In a small bowl, mix the oregano, paprika, coriander, salt and pepper.
- Dry the chicken and put it in a large bowl. Sprinkle it with 2 tbsp. olive oil and spices and add the lemon juice. Leave it 20΄-30΄ in the refrigerator to marinate.
- Preheat the fan-oven to 180ºC.
- Add 2 tbsp of olive oil in a large oven pan. Heat it on the stove over medium to high heat.
- When the oil is warm, add the chicken and cook on both sides until it turns brown, about 8΄-10΄. Transfer on to a plate.
- Saute the green pepper in the same pan. Add that the plate with the chicken.
- Heat the remaining olive oil in the same pan. Saute the onions and red pepper. Cook for 5΄, stirring occasionally.
- Add the garlic and cook for 1΄. Then add the tomato, broth, spices and salt and pepper. Bring to a boil and add the orzo.
- Remove from the heat and put the chicken and pepper in the pan. The sauce should be cover 2-3 cm above the orzo. If necessary, add a little boiling water.
- Transfer the pan to the preheated oven on the middle shelf. Bake without covering for 20΄. Remove from the oven, cover and let it stand for 5 mins. for the liquids to be absorbed. Do not stir.
Cook’s Tip
Juvetsi is eaten immediately. • If you want, serve with fresh chopped parsley and coarsely chopped feta cheese.
