Description

Ingredients

Scale
  • 100 gr. sultana raisins and currants
  • 100 gr. of coarsely chopped walnuts
  • 1 shot of rum
  • 3 apples peeled and cut into small cubes (450 gr.)
  • 2/3 cup (150 ml) olive oil
  • 200 gr. brown sugar
  • 2 eggs
  • 350 gr. all-purpose flour
  • 1 tbsp. cinnamon
  • 2 tbsp. baking soda
  • pinch of salt
  • lemon jest

Instructions

  • Soak the raisins in warm water for 10΄.
  • Preheat the fan-oven to 180ºC
  • In a large bowl, beat the olive oil and sugar with the mixer until it turns creamy white.
  • Add the eggs (one by one) and rum and beat well.
  • Add the dry ingredients, stirring with a metal spoon.
  • Add the apples, zest, raisins and walnuts.
  • Mix the mixture by hand forming a tight dough.
  • Butter and flour a cake pan or use a silicone mold.
  • Place the dough in the pan and bake for about 1 hour. Check if it has been baked inside by using a toothpick. If the toothpick comes out clean and dry, the cake is ready.
  • Leave it to cool for 15΄ before removing it from the pan.

Notes

Cook’s Tip

When adding the dry ingredients, hand mix gently. Type 00 flour is a soft wheat flour which gives dough its elasticity. Try it in a traditional Italian ciabatta bread.

Vasilopita contains a few eggs. Walnuts are rich in omega-3 fats, olive oil with monounsaturated fats, so they can be consumed by people with high triglycerides or high cholesterol as part of a balanced diet.
