Easy spinach pie sandwich for lovers of spanakopita.
Two slices of country loaf with a spinach pie filling for those with a weakness for the all-favourite Greek pie that want to keep their calorie intake in check. An alternative recipe is the salad with quinoa, spinach and mango.

Description
Easy spinach pie sandwich for lovers of spanakopita.
Ingredients
- 4 tbsp. olive oil
- 4 spring onions, finely chopped, or 1 small onion, finely chopped
- 150 gr. baby spinach, washed and coarsely chopped
- 1/4 cup chopped dill
- 1 pinch of nutmeg
- Salt – freshly ground pepper
- 200 gr. feta cheese or white cheese with reduced fat
- 8 thin slices of a wholemeal country loaf
Instructions
- In a non-stick pan, heat 2 tbsp. of olive oil over medium heat.
- Sauté the spring onions (or onion) for 2΄-3΄.
- Add the spinach and cook until water evaporates.
- Add the dill, nutmeg, salt and pepper and remove from heat.
- Crumble the cheese with a fork and mix it with the spinach.
- Allow the mixture to cool. Divide the mixture and spread on 4 slices of bread.
- Cover with the remaining slices of bread.
- Wipe the pan with some kitchen paper and heat the remaining olive oil over medium heat.
- Gentle fry the sandwiches until brown on both sides and the cheese melts slightly.
- Serve immediately.
