Description
Easy spanakopita is a spinach pie without the filo pastry. This one is slightly different – spinach pie without filo but with potatoes. It is easy to make and is suitable for a light meal or snack in the office.
Ingredients

- 450 gr. potatoes, peeled and cut into chunks
- 150 gr. chopped spinach
- 4 spring onions, sliced
- 1 tbsp. chopped mint
- 200 gr. feta cheese or light. cream cheese
- 4 eggs
- 50 gr. grated kefalotyri (or pecorino cheese)
- 1 pinch of nutmeg
Instructions
- Preheat the oven to 190 C or a fan-assisted oven at 170 C Lightly grease a pan about 30×20 cm (it can be aluminum). and spread non-stick paper.
- Boil the potatoes in salted water until soft, about 15΄. Strain them. Mash them to a purée melt and mix them with the spinach, onions and mint.
- Mash the cream cheese with a fork.
- In a large bowl, beat the eggs. Add salt, pepper, nutmeg, cream cheese and kefalotyri.
- Transfer the egg mixture to the mashed potatoes and mix well.
- Spread the fmixture in the pan and bake in the preheated oven for 30΄ or until it starts to brown.
- Allow 5΄ to cool before cutting the easy spanakopita.
Notes
Cook’s Tip
We can also use frozen spinach leaves.

Spinach is a source of calcium, iron and potassium. It contains β-carotene, which is converted to vitamin A. It also contains folic acid and vitamin C.
