Easy spanakopita (spinach pie)


Description

Easy spanakopita is a spinach pie without the filo pastry. This one is slightly different – spinach pie without filo but with potatoes. It is easy to make and is suitable for a light meal or snack in the office.


Ingredients

Scale
  • 450 gr. potatoes, peeled and cut into chunks
  • 150 gr. chopped spinach
  • 4 spring onions, sliced
  • 1 tbsp. chopped mint
  • 200 gr. feta cheese or light. cream cheese
  • 4 eggs
  • 50 gr. grated kefalotyri (or pecorino cheese)
  • 1 pinch of nutmeg


Instructions

  • Preheat the oven to 190 C or a fan-assisted oven at 170 C Lightly grease a pan about 30×20 cm (it can be aluminum). and spread non-stick paper.
  • Boil the potatoes in salted water until soft, about 15΄. Strain them. Mash them to a purée melt and mix them with the spinach, onions and mint.
  • Mash the cream cheese with a fork.
  • In a large bowl, beat the eggs. Add salt, pepper, nutmeg, cream cheese and kefalotyri.
  • Transfer the egg mixture to the mashed potatoes and mix well.
  • Spread the fmixture in the pan and bake in the preheated oven for 30΄ or until it starts to brown.
  • Allow 5΄ to cool before cutting the easy spanakopita.

Notes

Cook’s Tip

We can also use frozen spinach leaves.

Spinach is a source of calcium, iron and potassium. It contains β-carotene, which is converted to vitamin A. It also contains folic acid and vitamin C.
