Description
This recipe for fortune cake (vasilopita) is for all those searching for a healthier vasilopita.
Ingredients

- 100 gr. sultana raisins and currants
- 100 gr. of coarsely chopped walnuts
- 1 shot of rum
- 3 apples peeled and cut into small cubes (450 gr.)
- 2/3 cup (150 ml) olive oil
- 200 gr. brown sugar
- 2 eggs
- 350 gr. all-purpose flour
- 1 tbsp. cinnamon
- 2 tbsp. baking soda
- pinch of salt
- lemon jest
Instructions
- Soak the raisins in warm water for 10΄.
- Preheat the fan-oven to 180ºC
- In a large bowl, beat the olive oil and sugar with the mixer until it turns creamy white.
- Add the eggs (one by one) and rum and beat well.
- Add the dry ingredients, stirring with a metal spoon.
- Add the apples, zest, raisins and walnuts.
- Mix the mixture by hand forming a tight dough.
- Butter and flour a cake pan or use a silicone mold.
- Place the dough in the pan and bake for about 1 hour. Check if it has been baked inside by using a toothpick. If the toothpick comes out clean and dry, the cake is ready.
- Leave it to cool for 15΄ before removing it from the pan.

Cook’s Tip
When adding the dry ingredients, hand mix gently. Type 00 flour is a soft wheat flour which gives dough its elasticity. Try it in a traditional Italian ciabatta bread.
Doctor’s Tip
Vasilopita contains a few eggs. Walnuts are rich in omega-3 fats, olive oil with monounsaturated fats, so they can be consumed by people with high triglycerides or high cholesterol as part of a balanced diet.
